Food characterization in the omics era: current advances, analytical approaches, and future perspectives

Abstract

Food characterization is fundamental to ensuring food quality, safety, authenticity, traceability, and nutritional value in increasingly complex global food systems. Conventional analytical approaches often provide limited information on the molecular complexity of food matrices, necessitating the adoption of advanced, high-throughput technologies. Omics sciences, including genomics, transcriptomics, proteomics, metabolomics, lipidomics, and microbiomics, have emerged as powerful tools for comprehensive food characterization by enabling the large-scale analysis of genes, transcripts, proteins, metabolites, lipids, and microbial communities. The integration of these disciplines within the framework of foodomics has transformed food research from conventional assessments to systems-level investigations of food composition, functionality, and biological effects. This review provides a comprehensive overview of the major omics platforms and their applications in food quality evaluation, authenticity verification, safety monitoring, traceability, and nutritional assessment. Particular emphasis is placed on the role of multi-omics approaches in identifying molecular biomarkers associated with food origin, processing, adulteration, and health-promoting attributes. Advances in analytical technologies, including high-resolution mass spectrometry, nuclear magnetic resonance spectroscopy, and next-generation sequencing, are discussed in the context of foodomics workflows. Furthermore, the integration of chemometrics, machine learning, and artificial intelligence with omics datasets is examined as a means of improving data interpretation, predictive modeling, and real-time decision-making throughout the food supply chain. The review also highlights current challenges related to data integration, standardization, analytical reproducibility, and bioinformatics infrastructure, while outlining emerging opportunities in precision nutrition, digital food systems, and sustainable food production. By synthesizing recent developments across multiple omics disciplines, this review underscores the pivotal role of foodomics and multi-omics strategies in advancing comprehensive food characterization and supporting the development of safer, more authentic, and nutritionally optimized food systems.

Abstract

The valorization of agro-industrial by-products as sustainable plant protein sources has gained increasing attention due to the growing demand for alternative proteins and the need to reduce food processing waste. However, information on the extraction and bio-functional properties of proteins from indigenous apricot (Prunus armeniaca L.) kernel oil cakes remains limited. This study investigated the extraction of protein isolates from apricot cultivars Habi and Shai using ultrasound-assisted alkaline extraction followed by isoelectric precipitation and evaluated their physicochemical, functional, bioactive, and in vitro digestibility properties. Ultrasound-assisted extraction enhanced protein recovery, increasing it to 71.3% (Habi) and 77.8% (Shai). The isolates exhibited desirable functional characteristics, including water-holding capacity (0.53 and 0.40 g/g), oil-holding capacity (0.79 and 0.55 g/g), mean emulsion droplet size (2.8 and 2.65 μm), foaming capacity (38.9 and 48.3%), and foaming stability (39.0 and 37.6%) for Habi and Shai, respectively. Maximum protein stability was observed at pH 9.0. Both isolates showed concentrated-dependent α-glucosidase inhibitory activity, reaching 45% and 37.6% inhibition at 2500 mg/mL for Habi and Shai, respectively. Simulated gastrointestinal digestion significantly increased the degree of hydrolysis, antioxidant activity as determined by DPPH (38.7 and 44.4%)and ABTS (51.2 and 54.5%) assays and reducing power. Enzymatic hydrolysates generated using pepsin and pancreatin also exhibited enhanced antimicrobial activity against Escherichia coli (12 and 14 mm for Habi and Shai, respectively) and Pseudomonas fluoroscens (9.6 and 12.8 mm for Habi and Shai, respectively). This study demonstrates, for the first time, that protein isolates obtained from indigenous Pakistani apricot kernel oil cakes possess excellent techno-functional and bioactive properties, highlighting their potential as sustainable functional food ingredients, natural antioxidants, and nutraceutical protein sources in value-added food systems.

Encapsulated Salmon Polar Lipids Modestly Reduce Postprandial Platelet Sensitivity to PAF and Thrombin in Healthy Adults: A Pilot Study

 Our paper on postprandial effect of a novel salmon extract

   Abstract

The postprandial effects of a novel food-grade extracted salmon polar lipids (SPL) supplement against platelet-activating factor (PAF) and thrombin-induced platelet aggregation in a human pilot study was evaluated. This study was double-blinded, crossover, and placebo controlled in design. Five healthy volunteers completed 4 h time-course trials on 5 separate days. Blood was drawn at baseline before subjects consumed a standardized breakfast with one of the following treatments: a low-dose (0.25 g) or a high-dose (0.5 g) of SPL encapsulated within a stomach resistant capsule (LDSR and HDSR respectively) or a non-resistant capsule (LDSNR and HDSNR, respectively), or placebo capsules containing food-grade glycerin (0.5 g; Placebo). Blood was analyzed at 1 h intervals for 4 h. Among the treatments tested, the high-dose non-resistant capsule (HDSNR) produced the clearest postprandial effects, inducing significant increases in EC50 (reduced platelet sensitivity) for PAF at 2–3 h and for thrombin at 3–4 h post-ingestion. Smaller or delayed effects were observed with the high-dose resistant capsule (HDSR), while low-dose formulations produced minimal changes. Postprandial plasma glucose, lipid profile (TC, HDL-C, LDL-C, TG), fibrinogen, prothrombin time, and activated partial thromboplastin time remained unaffected across all trials. This pilot study provides the first in vivo indication that SPL supplementation may modestly attenuate platelet responsiveness to both PAF and thrombin without altering standard haemostatic or metabolic biomarkers. Larger controlled studies are warranted to confirm these preliminary findings and define optimal dosing and formulation strategies.
