Bunratty Winery (BW)

Do u know the phrase that "research is not confined in the lab"?

Well...

It's so true.

Few days ago, I discovered the Bunratty Winery.

An amazing place where they make some extraordinary drinks; the most interesting, in my humble opinion, is the Bunratty Mead and Meade.

Mead, sometimes known as ‘honey wine’ in its purest form, is simply honey and water, carefully fermented using yeast and then aged to allow the flavours to blend and mature. The secret lies in making the perfect choice of honey and the intricate science of the fermentation and maturation, which is similar to making grape wine.

In the photos below, you can see the range of BW products, and the Gold medal (TWO years in a row!) for their amazing whiskey [Uisce Beatha (Ishka Baha)].

 P.S.

Only a fortress could hold such treasures, where passion and fire are rekindled.

FYP presentations: class 2023, bronze award

From L to R: Katie Mahon, Claudia Lennon, Ciara Geraghty and Ioannis Zabetakis

On Wednesday 29th March 2023, the FYP presentations of the 4th year students in BSc Food Science and Health (class 2023) took place in Pavilion at UL.

Ciara, Claudia and Katie presented their project on the lipid profile of a novel yoghurt drink and they were awarded the bronze award from our colleagues in Kerry Group (Drs Call Flynn and Edward Costello). Over the past two years, in our group at the Department of Biological Sciences in UL, we have developed a novel yoghurt drink from sheep (ovine) milk in collaboration with Rockfield Ltd and the support of Enterprise Ireland. The FYP project was on the characterization of the lipid profile of this drink.
